2 TBSP Caribbean Fusion pepper pot hot sauce
2 tsp Caribbean Fusion Jerk Seasoning and marinade hot or mild
3 TBSP Olive oil
1 pkg Firm Organic Tofu
2 cups of cooked Navy OR black beans
1 cup chopped tomatoes
1/2 cup sweet corn
1/2 cup onions
1/2 cup sweet peppers
3 cloves of garlic
1/2 tsp cumin
1/2 tsp chilli powder
1/2 tsp freshly grinded coriander seeds
1/2 tsp freshly grinded fennel seeds
Dash black pepper
Sea salt to taste
Handful of cilantro
1/2 lime
Thoroughly rinse drain and pat dry Tofu. Cut Tofu in medium size cubes.
Over medium heat lightly fry tofu 3 to 4 minutes on each side. Remove from frying pan and set aside.
Add 1 tbsp of olive oil to pan and sauté onions, sweet peppers and garlic for 2 minutes. Add Tofu to pan and season with cumin, coriander, chili powder, fennel seeds, salt and black pepper. Stir and lower heat Cook for 5 minutes. Add tomatoes, sweet corn, stir and simmer for 5 minutes covered. Add black or Navy beans, stir and simmer for 5 mins. Add chopped cilantro and the squeeze of half lime cook for 2 minutes.
Serve with rice, quinoa, tortilla wrap or Roti
Approx cooking time 25 to 30 mins
VEGAN FUSION PASTA
16 oz ancient grain pasta
1 bottle pasta sauce 16 oz
1 cup chopped carrots
1 cup chopped kale
1 cup chopped cabbage
1/2 cup asparagus
1/2 chopped onions
4 clove garlic
1 1/2 tsp Caribbean Fusion Jerk Marinade MILD
1/2 tsp Spice it Rite All purpose Seasoning
3 Tbsp olive oil
1/2 cup chopped cilantro
Salt to taste
Vegetarian burger (optional)
Boil Pasta according to packaging direction drain, rinse with cold water and set aside
In a sauce pan over medium heat sauté onions and garlic for 3 minutes. Add vegetables and season with salt and Spice it Rite All purpose Seasoning sauté for 15 minutes. Add pasta sauce, season with Spice it Rite All purpose and Jerk Marinade. Cook for an additional 10 minutes. Add Pasta, stir and simmer for 10 minutes. Crumble 2 vegetable bean patties along with cilantro and stir.
Serve Hot
Fusion Pasta
1 cup diced carrots
1/2 cup sweet peppers
1/2 diced onions
1/2 cup sliced mushrooms
1 tbsp chopped basil leaves
2 tbsp chopped cilantro
8 oz penne pasta
2 cups pasta sauce
1 tsp Spice it Rite All purpose Seasoning
1 tsp Caribbean a Fusion Jerk Seasoning and marinade.
1 tsp of Caribbean Fusion simmering pepper sauce
Boil pasta to packaging directions drain and set aside. In a saucepan over medium heat add 3 tablespoons of olive oil. Sauté carrots, onions, sweet peppers and mushrooms for 10 minutes.
Add 2 cups of pasta sauce, 1 tsp of Spice it Rite all purpose seasoning, 1 tsp of Caribbean Fusion Jerk seasoning and marinade, and 1 Tsp of Caribbean Fusion Tamarind Chutney simmering pepper sauce and 1 tbsp basil. Simmer for 12 minutes, stirring occasionally. Add pasta, and combine thoroughly. Lower heat and simmer for an additional 10 minutes. Garnish with cilantro.
Caribbean Fusion Okra Black bean stew
1 lb okra
1 cup black beans
1 cup chopped sweet peppers
1 cup chopped tomatoes
1 cup chopped onions
3 cloves garlic
1 tbsp Caribbean Fusion Spiced Fish Fry and Seafood Seasoning
1 tbsp Caribbean Fusion Spice it Rite All purpose Seasoning
Salt to taste
2 TBSP Tamarind Chutney Simmering pepper sauce
3 tbsp olive oil
1 tbsp plant butter
Wash and chopped onions, tomatoes, sweet peppers, and garlic and set aside.
Wash and chop okras into halves.
In a sauce pan over medium heat add olive oil and heat for 3 minutes. Add onions ,sweet peppers, garlic, tomatoes and sauté for 5 minutes.
Season with all purpose seasoning, spice’s Fish Fry and seafood seasoning, salt to taste, and 1 tablespoon of plant butter. Sauté for 5 minutes. Add okra and Season with Tamarind Chutney simmering pepper sauce, fish seasoning, and all purpose seasoning. Cook for 5 minutes. Add black beans and cook for an additional 5 minutes.
