Caribbean Fusion - Simply delicious easy bake Salmon
Ingredients
1 Lb of Salmon fillets
1/2 tsp Caribbean Fusion Spice it Rite All purpose seasoning
1 tsp Caribbean Fusion Spiced fish fry and seafood seasoning.
1 TBSP olive oil
Salt to taste
Slices of lemon or lime to garnish
Wash salmon with lime juice drain and pat dry. Season salmon with salt to taste, All Purpose seasoning, and Spiced Fish fry and seafood seasoning marking sure the season is thoroughly rubbed in. Coat fish with olive oil on both sides. Transfer to a baking dish skin side down.
Bake at 400 F for 25 mins. Be mindful not to over cook. The bottom should be slightly crunchy. Garnish with lemon or lime slices. Serve with Rice or baked potatoes
Caribbean Fusion - Parmesan crusted Fish nuggets
1 lb of Fish fillets (any variety)
1/2 tsp Caribbean Fusion Spice it Rite All purpose seasoning
1 tsp Caribbean Fusion Spiced fish fry and seafood seasoning.
Salt to taste
1 egg
1/2 cup bread crumbs
Parmesan cheese(optional)
Wash fillets with lime or lemon juice drain and pat dry. Cut into 1/2 inch strips season with salt and spices. Add egg into a bowl and mix to create egg wash. Dip seasoned fish into egg wash and then into bread crumbs. Fry in a deep fryer for 8 mins. Garnish with Parmesan cheese.
Fusion Jerk chicken
3lb chicken parts
1/2 lime
Salt to taste
1 tsp dry Caribbean Fusion Jerk Rub
3 TBSP Caribbean Fusion Jerk MARINADE
Wash Chicken and drain. Squeeze lime juice over chicken. Season chicken with salt, dry Jerk rub and marinade. Massage well and marinate overnight.
Bake in the oven at 375 F for 1 hour or until done. Turning occasionally.
Or slow grill using charcoal for 1 1/2 hour or until done.
Juicy Soul Fusion Fried Chicken
3 lbs chicken parts
3 Tbsp Caribbean Fusion Sauces and spices Soul Fusion Chicken Seasoning
1 tsp Caribbean Fusion Sauces and Spices Spice it Rite All purpose Seasoning
Salt to taste
1 cup all purpose flour
2 cups vegetable oil
Season chicken with spices and massage thoroughly. Marinate for 30 mins. Longer if time permits.
Heat oil in a frying pan or fryer. Light toss chicken with flour. Fry for approx 18 to 20 mins. ENJOY 😉
Caribbean Fusion Grilled Shrimp
Ingredients
16 jumbo shrimp
1/4 tsp sea salt
1 tbsp olive oil
4 skewer sticks
2 tsp Caribbean Fusion Master Roasting and Grilling Seasoning blend
Wash devein rinse and drain shrimp. Add olive oil and toss shrimp to evenly coat. Season with salt and Roasting and Grilling Seasoning. Arrange shrimp on skewer sticks. Grill for 6 minutes. 3 minutes on each side.
Grilled Shrimp salad on French Bread
Ingredients
15 grilled shrimp ( see previous recipe)
1 medium diced carrot
1/2 cup diced celery
1/2 diced chopped tomatoes
1/4 diced red onions
3/4 cup mayonnaise
1/4 tsp
2 tbsp fresh lemon juice
1 French bread
Chop shrimp into small bite size. Add celery, carrots, red onions, chopped tomatoes, salt, lemon juice. Combine. Add mayonnaise and combine thoroughly. Refrigerate. Serve on slices of French bread.
Caribbean Fusion - Cold and Flu busting Herbed Vegetable Chicken Soup
**Vegan can omit the chicken
3 lb chicken parts
1 tsp Caribbean Fusion Soul Fusion Chicken Seasoning
1/2 tsp Caribbean Fusion Spice It Rite All purpose Seasoning
2 tbsp Caribbean Fusion Pepper Pot Hot Sauce
2 cups chopped carrots
2 cups chopped celery
1 cup chopped mixed sweet peppers
1 cup chopped chayote
1 -2 cups of chopped kale or collard. Greens
1/2 cup chopped asparagus
6 cloves garlic
1 medium chopped tomato
1/2 cup chopped leeks
1/2 chopped onions
3 tbsp chopped fresh thyme leaves
4 Irish potatoes (cut in quarters)
1 tsp Olive oil
Salt to taste
Cilantro ( garnish)
Season chicken with salt, Soul Fusion chicken seasoning and Spice It Right All purpose seasoning. In a stock pot over medium heat Add olive oil and lightly fried chicken on both sides until it’s lightly brown. Remove from heat and set aside. Using the drippings from the chicken
Add chopped vegetables, onions, garlic leeks, thyme and season with salt to taste and Spice it Right All purpose Seasoning. Sauté and cover for 15 minutes.
Add 2 quarts of water, the chicken, chopped kale or collards, 2 tbsp Pepper pot hot sauce. Stir and cook covered over medium high heat to 30 mins. Remove chicken and use a fork to shred the meat. Add back to pot along with Irish potatoes. Cook on medium high for an additional 20 minutes. Garnish with cilantro and serve hot

Coconut crusted herbed honey Chicken Breast
Ingredients
1 split chicken breast
2 tbsp Caribbean Fusion Soul Fusion Chicken Seasoning
1 tsp Caribbean Fusion Spite it Rite All purpose Seasoning
1 Tbsp Caribbean Fusion Tamarind Chutney Simmering Pepper Sauce
1/4 tsp black pepper
Salt to taste
1 sprig of Rosemary
2 eggs
1 cup flour
1/2 cup coconut flake unsweetened
1/2 bread crumb
Oil for frying
1 tbsp butter
1 tbsp honey
Instructions
Wash drain and thoroughly dry chicken breast. Use a rolling pin or a meat tenderizer hammer to flatten chicken breast to 1/4 to 1/2 inch thick. Season chicken with chicken seasoning, Spice it Rite All purpose seasoning , black pepper and salt to taste. Marinate for 30 minutes.
Egg wash
In a container whisk 2 eggs with 1 tbsp Tamarind chutney simmering pepper sauce
In a second container combine coconut flakes and breadcrumbs. Season with 1/4 tsp salt and 1 tsp Soul Fusion Chicken Seasoning
In a 3rd container add 1 cup flour
In a frying pan over medium heat add frying oil. Add rosemary sprig. Heat for 3 minutes.
Coat chicken breast in egg wash, then coat in flour and then coat thoroughly in coconut mix. Fry for 3 mins on each side.
add 1 tbsp of butter to frying pan. Use the oil mixture to base chicken breast for 2 minutes. Remove chicken from heat and rest chicken for 2 minutes. Drizzle with honey and use a basting brush to coat . Enjoy hot or cold. Great in seasoning

2 – 4 TBSP Caribbean Fusion Jerk Seasoning and Marinade
1 Cup Barbeque sauce(use your favorite)
1 tsp Caribbean Fusion Dry Jerk Seasoning
Season Chicken with salt and pepper to taste. Add dry Jerk, Jerk Seasoning and Marinade and massage thoroughly. Marinate for 30 minutes. Bake at 380F for 45 minutes. Liberally baste chicken with Barbecue sauce. Cook for an additional 15 minutes. Baste with more Jerk-barbecue sauce to your desired consistency. Cook for an additional 10mins or until done.
